Yeah, personally the stats are a bit of a curiosity.

yeah, i mean, it's just a nice extra feature really. If people whore the stats (play only against bots to get increased kpd as points are done well) then that's up to them to spend their time doing. The only people who care are themselves!

And Ive randomly dropped 200 skill points in one day O_o I didn't think I was playing THAT badly

Stats are calculated on the fly based on multiple factors, including the points of other players.

How does it know who you are? By that I mean does it go by steam id? As in if I change my in game name will my stats start again?

I don't think it will. As far a sI believe Syphon it's done through SteamId :O. Si/Skillers would have to restart the stats for name changes to be reconised....as far as I believe

It's done by SteamID, and I think it choses your most used name as the one on the list. Well that's my current theory.
