I'm thinking at some point in the (Not-so) far future I'm going to have to upgrade this old heap o' metal and I just want to say the sort of stuff I'm going to need/want and just wanted you guys to give me an idea how much it's all going to cost( BAH! Spending money)

What you probabily want is:

CPU: E7200 (45nm C2D) or Q6600 (65nm C2Q)
Graphics: ATI HD4850/HD4870
RAM: 4GB (8 is unrealistic)
HDD: Samsung SpinPoint F1 HD103UJ (1TB)

OK, here's an idea of price. My comp;

Quad Core
4GB RAM
Top end Graphics (HD4870 512MB)
1TB HDD

£800

If you half all those (graphics to HD4850) it will cost £400-£500.

About your requirements;
Dual/Quad is the way to go. Core 2 is your best bet ATM. Quad core is a bit more expensive than dual, so it's a budget thing.
I would say 2GB RAM with a dual core, 4GB with a quad. However, RAM is dirt cheap, so you may aswell go wth 4GB. Bear in mind you need Vista 64 for the full use of 4GB.
Ignore graphics card RAM amount. Graphics card performance is based on the core they use. HD4850 or HD4870 are the way to go, depending on budget. Don't bother with the 4850 1GB model, get the faster 4870 512MB model. If you can afford it, the 1GB HD4870 might be better.
HDDs are cheap, 1TB is £80-90, 500GB is half that. Basically, buy to your neads. The Samsung SpinPoint F1 is the fastest 1TB drive, and also the cheapest.
USB slots come with the motherboard, you get loads.
Case+cooling is down to preference, get one with atleast 2x120mm fans.

About your upgradey things;
8GB RAM is pointless, don't bother.
Dual graphics is pointless unless you have a massive screen (which cost £500+ alone). Don't bother.
HDD, see requirements thing.

For a full computer you need;
Motherboard (compatible with your processor). Get a decent one, but not too expensive.
Processor.
RAM - compatible with mobo. DDR2 is the way to go atm.
Graphics
HDD
DVDRW (welcome to cheaptown, these are insanely cheap, just get a SATA one)
PSU (don't skimp here, for a spec like mine, 600W+ recommended. get a good brand like Corsair)
Case + fans (just get one you like the look of and has atleast 2 120mm fans)
